Shiraz in the Press

Our press hard at work, during the 2007 Harvest. Damien has gone with the 'open fermentation' process for the Shiraz, and after 3weeks in the vat with regular plunging, the Shiraz was then loaded into the press for pressing off.

The residual compressed skins are used as mulch on our vines, nothing goes to waste. As you can see the lush purple colour is a mark of our Shiraz wines, including our signature red 'Mad Diver', our most popular red blend, the colour staying through the processes right to the glass.
Currently this Shiraz is in barrel at our Winery, where it will mature and will be sent for bottling in 2008.
